Making Caramel Apples
This recipe makes the caramel, not the individually wrapped kind, although good, they sometimes after melting will slip off the apples and pool at the bottom which is not so much fun to eat or decorate. Here are a few tips to help you with this recipe.
First- select good eating apples
Granny smith, gala or golden delicious. Flavor depends on if you like a tart apple or juicy sweet. Check this site for more information about apples http://www.michiganapples.com/About/Varieties. Choosing organic apples will help you avoid the second step.
Second-remove wax from apples

Third- insert chopsticks or wooden craft sticks
Refrigerate until apple is chilled for 30 minutes before coating with caramel. Remove from refrigerator and dry apples with a towel. Make sure there is no water or condensation on the apples. Butter your baking parchment with softened butter and not cooking spray. Place apples on parchment lined baking sheet until ready to dip in caramel.
Fourth- Use a candy thermometer for accurate cooking of caramel
Fifth- Prepare ingredients, toppings and baking sheet
Assemble your caramel ingredients before cooking. Place toppings such as chopped peanuts, pecans, mini M & M’s, and assorted candies in shallow bowls ready for the caramel coated apples. You will need to immediately dip the caramel apples into the toppings while the caramel is wet. Once apples harden, you can drizzle with melted chocolate candy coating or morsels or white candy coating. I found the candy coating performed best over melted white chocolate. The white chocolate even using the premium kind, would not melt for drizzle. Disappointing. I did not get the chocolate too hot, it probably didn’t have enough cocoa butter/fat in the kind of bar I selected. I will use candy coating every time. Oh.. the baking sheet. Line a baking sheet with parchment paper and butter generously. Cooking spray did not work as well. Butter is always better. Someone else always says that too??? I know I have heard that before. Perhaps it was Paula Deen? Love that girl!
Sixth- Making the caramel
