Chocolate Banana Sundae Cake Recipe
Here is a Chocolate Banana Sundae Cake Recipe that your family, kids will love! The sundae is a baked vanilla cake flavored like banana cream pudding with a creamy chocolate filling right in the middle of the cake. Chocolate Banana Sundae Cake Recipe Step 1
Prepare aluminum foil to cover the waffle bowls. I measured the waffle bowl, it was 4″ across, so the foil circle needed to be 8 ” wide to cover just slightly inside the waffle bowl edges. Use a marker to draw around the 8 ” plate, you will cut this line off, and you will be able to see where to cut.
Fold the foil circle in half and then half again and this will give you guide lines to help center the waffle bowl. Center the bowl and fold up the foil edges, make sure the shiny side of foil is placed down on the counter and the dull side is facing you.
The foil has the shiny side outside the waffle bowl . The foil helps keep the bowls in shape while baking and protects the edges and bottoms from getting too brown. The waffle bowls are already browned, that is the way they are packaged. In the photo the waffle bowls look already baked but they’re not. Place the bowls on a parchment lined baking sheet and preheat your oven to 350 degrees. Your waffle bowls are ready to be filled.
Cake filling and Batter Step 2
Basic ingredients begin with a classic white cake mix and a package of Banana Cream Instant Pudding and Pie mix. I always add pudding mix to my cake mixes along with additional ingredients on the back side of the cake package. Actually, I have a cookbook called Just Desserts that is no longer in print, but could be if there were enough requests, that has a cupcake chart with various cake flavors with different baked in fillings. Cake Batter mixed and ready to fill waffle bowls. This smells so good, the banana cream flavoring makes this vanilla cake smell like a chocolate eclair! Really!!! If you don’t like banana cream, use white chocolate instant pudding and pie mix, your batter will be a brighter white and will taste super moist and delicious. This recipe has a baked in filling that features chocolate, cream cheese, dark cocoa and coconut. If you don’t like coconut, add chocolate chips. Preparing the Baked in Filling- Step 3
You don’t have to put a filling inside this cake, but it is so much fun to bite into the cake and find a rich chocolate creamy center inside. Special Dark chocolate, egg yolk and cream cheese with some sugar creates this yummy chocolate truffle like filling. Stir all ingredients together then add to the unbaked cake batter in the waffle bowl. I also used this filling in mini ice cream cones. I added sweetened coconut to this mixture and used special dark Hersey’s cocoa for a decadent dark contrast in the white cake. You don’t want this mixture to be too wet, that is why an egg yolk was used instead of the entire egg. Other additions to this filling might include, mini chocolate chips, brickle, chopped nuts, chopped candy bars, mini M & M’s, and peanut butter.
Filling and Cake Batter Come Together- Step 4
I used disposable pastry piping bags to hold the cake batter and one for the filling to make filling the waffle bowl easier and cleaner. Cut the ends of the pastry bags with scissors and pipe the cake batter 2/3 full into the foil wrapped waffle bowl .. the foil covers slightly over the inside edges of the bowl. Right in the middle of the batter, pipe a large dollop of chocolate filling in the center. Cover the filling with more cake batter. See photo

Decorating the Chocolate Banana Sundae Cake
The cake is baked, cooled and foil removed, now for the fun part! Make chocolate sauce or ganache, pour over the top of the entire cake. Allow ganache to stand 20 minutes or so until the chocolate is not moving around on top of the cake. Pipe fresh whipped cream on the top, or use vanilla frosting. If you use fresh whipped cream you will have to keep refrigerated until serving time, if you use vanilla frosting these can stay at room temperature. In the photo I used vanilla frosting. You can make your own frosting, but I purchased canned , it holds up well for TV lights. I made this for Daytime Tri-Cities Cooking segment and needed something to hold up without refrigeration.
Add the pretty sprinkles and the long stemmed cherry and you have the perfect Ice Cream Cake Sundae, without the ice cream. This would make a fun April Fools Dessert for your family. Just say’n.
Additional Idea for Chocolate Banana Sundae Cake
I found these cute mini ice cream cone cups at the local grocery story next to the ice cream freezer section. These cone cups are about 2″ tall. So adorable and cute. They are light in color and when baked they do not turn brown. If that bothers you, you can make an egg wash and coat the outside of the cones with the wash before you fill them with leftover cake batter.
You will have leftover cake batter from the 8 waffle bowl sundaes, so this is another fun way to serve it up sassy with your kids. Fill these mini cups with cake batter 1/3 full , then add a dollop of chocolate filling, then top with batter. The entire filling in the cup should be 2/3 full to prevent cake spill-over the cone. Don’t want to have to clean the oven when you are having so much fun with your kids. I used a mini muffin pan to hold the minis in place while baking, which worked really well.
Bake these minis for 15 minutes or until cake is done in the center. Allow to cool before decorating like an ice cream cone.
These are so cute and adorable. You could serve these as mini dessert bites for your next Summer evening dinner party! To make these less sweet, use fresh whipped cream instead of frosting, but keep refrigerated until serving time. Sprinkle the sugary delights while the frosting is wet to they will stick to the swirl.
