Fresh Strawberry Lemon Cake Recipe I always use a package of instant pudding and pie mix with all of my packaged cake boxed mixes, except when they have pudding already in the mix. The mix makes the cake even more moist and rich. Adding strawberry puree from the fresh berries and a package of strawberry gelatin really makes the berry flavor robust and bursting with a berry-delicious flavor. The Heritage Swirl Bundt pan must be greased and floured before adding the cake batter, so do that first as well as pre-heating your oven to 350.
Puree strawberries to equal 1 cup, save any left over puree for the frosting/glace, I used 16 medium berries to get one cup of puree. Puree in a blender for best results. No need to strain, tiny seeds are chopped up in blender. ( If you don’t have fresh strawberries you can use frozen , same amount of berries).
All ingredients blended together, next step to pour into prepared bundt pan.
Pour batter into pan, run a knife through batter to get rid of any air pockets. Level top of cake batter, then place on a baking sheet and into 350 degree oven for 50 minutes. Let cake cool in pan for 15 minutes before inverting on cooling rack. For complete recipe www.serveitupsassy.com.
TaDa! You did it! The cake is cool enough to frost with Strawberry glaze.
Mix glace with fresh strawberry puree, cream cheese, butter and confectioner’s sugar. Glaze will be thin, if you want it thicker like frosting, add more confectioners sugar and go lighter on the strawberry puree. The berries are sweet naturally and adding too much confectioner’s sugar will make the glaze really sweet. I also thought about using chocolate ganache to pour over the cake instead of the strawberry glaze, maybe I will try that on the next cake.
Just thinking about the idea, the flavor would be good, chocolate and strawberries. YUM!
