The secret to a light sponge cake is room temperature eggs. Allow your large eggs to warm up a bit. If you are in a hurry, place the eggs in a warm bowl of water until the eggs feel warm to touch . Assemble all the ingredients before mixing will help you put this cake together fast. Make sure your mixing bowl is room temperature too, unlike whipping cream when you want the mixing bowl chilled. Parchment paper is a must have for baking jelly roll cakes. Using cooking spray, spray your baking sheet bottom, sides and top side of parchment sheet. (Both sides of the parchment paper should be sprayed. ) I like to use pre-cut parchment paper sheets for this baking pan, which is a cookie sheet. I do cut down the sides of the paper to fit the pan and make sure it is really well greased. You will be pouring your sponge batter in this pan, baking it, then turning the cake out on a confectioner’s sugar covered tea towel. This parchment paper will help the cake come out of the pan with ease. YOU will love parchment paper if you haven’t used it before. Prepare your tea towel with sifted confectioners sugar. This is for the warm cake after it is baked you will be turning the cake out of the baking pan onto a sifted confectioner’s sugar filled tea towel. The cake will be rolled up while warm and the confectioner’s sugar keeps the cake from sticking to the towel and itself to get a great rolled cake.
Beat the eggs until light and lemon colored, then gradually add the granulated sugar
The next step is to add the water and flavoring, then the dry ingredients, flour, baking powder and salt. Beat on medium speed when adding the water and flour mixture. Another tip, when measuring flour, spoon the flour into the dry ingredient measuring cup and level the top off with the back of a knife. This will insure you get the right amount of flour and not too much. You don’t want the flour to be packed in the cup. Your cake will not turn out good, it will be hard and not rise properly for a sponge cake. The sponge cake is a light and airy type cake… like a sponge.

Pour batter into your pan, then lightly pick up the pan and drop it. What??? I know that sounds weird, but see all the bubbles on the top of the cake batter, you want to get rid of those. So banging the pan on the counter will pop the bubbles. You could also take a toothpick and pick each bubble, but that will take awhile. Pick up the pan and drop it a couple of times, you will remove most of the bubbles. Place pan in middle of your oven and bake 12-15 minutes at 375. Remove from oven and while the cake is hot, loosen edges of cake with a sharp knife, then immediately turn the pan over and drop cake onto confectioner sugar covered tea towel.
Remove parchment paper from top of cake gently so you don’t tear the cake.
Rolling the Warm Cake for the Jelly Roll
Starting on the shortest end, roll the cake with the tea towel like a jelly roll. After rolled, set aside to cool. Towel will remain inside the roll until cooled. Once cake is cooled, unroll cake and remove towel. Re-roll the cake with out the towel. At this point you can freeze the cake roll without the filling or you can fill the cake with your filling. The cake without filling freezes well. Just make sure you wrap it plastic wrap and then aluminum foil.

Make sure your mixing bowl is chilled and beat your heavy whipping cream until soft peaks form Add 3 tablespoons of confectioner”s sugar to the whipped cream and flavoring, then beat until stiff peaks form. This is the filling for the Strawberry Blueberry Cake Roll. I know you are wondering where the blueberries are? They are not in this photo but they are added with the strawberries, if you decide to add blueberries. Blueberries are optional and so are the strawberries, you can add any kind of fruit or filling to this sponge cake. Ice cream is a great filling, but you have to keep the cake roll frozen .. of course.

Wash berries with cool water and pat dry. Remove stems and slice into thin slices or dice berries the same size as the blueberries if desired. Set aside while you unroll your jelly roll cake and fill with whipped cream
Spread whipped cream all over the cake. If the cake edges are not even or dried out slightly trim those edges off if you would like or you can wait until the cake is filled and rolled, then trim off the two ends. That is what I like to do before serving the cake, cut the two end pieces off, besides I want to taste it before serving. Everyone always wants a bite before it is ready. The trim pieces are great with the whipped cream and a little berry.
Add your sliced berries to the whipped cream. I usually don’t add sugar to the berries, but if you taste them and they are not as sweet as you like, sprinkle a small amount of sugar or confectioners sugar over the top of the berries before rolling up. Not too much, because the berries will become juicy and your cake will be soggy. Your berries should not be over ripe they will juice up on you and your pretty white whipped cream will become a blurry red, more like a bulls-eye. Unless that is what you want..a bulls-eye. Ha Ha.
