25 Minute Lo Mein Recipe

Easy to make 25 minute Chinese take out Lo Mein.  Egg noodles or Angel hair pasta can be used for the noodle dish/bowl.  The sauce is sweet, salty, spicy and savory all in one dish.  Add a little more sweetness to balance the salty and savory if desired.  Serve as a side dish or add meat to make it main dish.  Cooked meats such as chicken, beef or pork.

Sauce:

3 tablespoon soy sauce

l Tablespoon honey or brown sugar

1 teaspoon sesame oil

1/2 teaspoon ground ginger

1/41/2 teaspoon Sriracha, or more to taste

Instructions

2 cups mushrooms, thinly sliced

1 red bell pepper, julienned or cut into strips

1 carrot or 5 small carrots, julienned or cut into strips

1/2 cup fresh snow peas

2 cups fresh spinach

8 ounces lo mein egg noodles or angel hair pasta

1 tablespoon olive oil

2 teaspoons minced garlic or 2 cloves garlic, minced

2 green onions, chopped

Notes

  1. Prepare all vegetables, dice, julienned, chopped, set aside in separate bowls.
  2. Prepare sauce by mixing all ingredients together in small bowl, set aside.
  3. In large saucepan, boil water and cook noodles according to directions on package.
  4. Drain noodles and set aside.
  5. In large skillet or wok add olive oil and heat over medium high heat.  Add garlic, mushrooms, bell pepper and carrots.  Cook until tender about 4 minutes, stir frequently.
  6. Stir in snow peas, spinach and green onions cook 2-3 minutes or until spinach has wilted.
  7. Stir in noodles and sauce, gently toss to coat.
  8. Serve immediately.
