Tortellini Kabobs are cheese filled tortellini, black olives, artichokes, pepper jack cubes, and pepperoni marinated in Italian spices, oil and vinegar over night then assembled as an appetizer kabob. This appetizer recipe makes 48 kabobs, easy to assembled and makes a pretty presentation.

Italian Tortellini Kabobs

- Yield: 4 dozen kabobs 1x
Ingredients
1 (9 oz.) package uncooked refrigerated cheese filled tortellini
1 (14 oz.) artichoke hearts, drained and quartered- not marinated
1 (6 ounces) whole pitted black olives, drained
1 (3.5 oz) pepperoni slices (1 ½ inch rounds)
1 package 8 inch wooden skewers or 6” mini skewers
1– 8 oz. Bottle Newman’s Oil and Vinegar Dressing
1- 8 oz. Package of Monterey Jack or Farmer’s Cheese- cubed as desired
1 pint Cherry Tomatoes, halved
Instructions

Prepare tortellini according to package directions. Drain and Cool.

Place tortellini, hearts, olives, and pepperoni onto skewers.

Place skewers in a 9 x 13 inch pan and pour dressing to coat.

Cover and chill 8 hours, turning occasionally.
Notes
Tailgating Tip: Transport skewers in large zip plastic bag, keeping the marinade covering the appetizers. Cover the tip of the skewer with tortellini or food so the sharp ends of skewers will not puncture the bag. Keep refrigerated until serving time.
