Easy quick salad featuring English cucumber, red, orange and yellow sweet bell peppers, ripe tomatoes, green onions and crumbled feta or blue cheese drizzled with Greek Dressing.
Side-line Salad Recipe

- Yield: Serves 4- 1 cup dressing 1x
Ingredients
1 English cucumber, washed and chopped into bite size pieces
2 red, orange and yellow sweet bell peppers, diced
2 tomatoes, chopped or diced
1 bunch green onions, sliced
4–6 ounces of crumbled feta or blue cheese
Greek Dressing:
2 teaspoons minced garlic
1/2 teaspoon sea salt
2 teaspoons honey dijon mustard
2 tablespoons lemon juice, fresh squeezed
1/2 teaspoon honey or sugar
4 tablespoons red wine vinegar
1/2 teaspoons basil, parsley leaves
1/4 teaspoon oregano leaves- optional
1/2 cup mild olive oil
Instructions
- Chop or dice all vegetables to desired thickness. Place in a large bowl.
- Crumble feta or blue cheese, toss to combine.
- Cover salad and let flavors blend in refrigerator 2-3 hours before serving.
Optional: add chopped black olives, artichoke hearts, chicken or sirloin steak strips.
Greek Dressing:
In blender mix all ingredients except olive oil. Pulse on low to mix, slowly add olive oil, blend until creamy. Keep refrigerated.
Drizzle dressing over salad.
