Side Line Salad with Greek Dressing


1 English cucumber, washed and chopped into bite size pieces

2 red, orange and yellow sweet bell peppers, diced

2 tomatoes, chopped or diced

1 bunch green onions, sliced

46 ounces of crumbled feta or blue cheese

Greek Dressing:

2 teaspoons minced garlic

1/2 teaspoon sea salt

2 teaspoons honey dijon mustard

2 tablespoons lemon juice, fresh squeezed

1/2 teaspoon honey or sugar

4 tablespoons red wine vinegar

1/2 teaspoons basil, parsley leaves

1/4 teaspoon oregano leaves- optional

1/2 cup mild olive oil


  1. Chop or dice all vegetables to desired thickness.  Place in a large bowl.
  2. Crumble feta or blue cheese, toss to combine.
  3. Cover salad and let flavors blend in refrigerator 2-3 hours before serving.

Optional:  add chopped black olives, artichoke hearts, chicken or sirloin steak strips.

Greek Dressing:

In blender mix all ingredients except olive oil.  Pulse on low to mix, slowly add olive oil, blend until creamy.  Keep refrigerated.

Drizzle dressing over salad.
