Apple Cider and applesauce makes a moist cake. Melted butter, sugar and cinnamon coats the cake as a garnish.

Ingredients

115.25 ounce package yellow cake mix

13 ounce package instant vanilla pudding & pie mix

1 cup apple cider

1/3 cup apple sauce

1/3 cup vegetable oil

3 eggs

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground cardamon

Cinnamon Sugar Coating

4 tablespoons butter, melted

4 tablespoons apple cider

1/4 cup sugar

2 teaspoons ground cinnamon* depending on how much cinnamon you prefer

Whipped Cream Recipe

1 cup heavy whipping cream, chilled

1/4 cup confectioner’s sugar

1/4 teaspoon ground cinnamon

1/4 teaspoon vanilla

Instructions

  1. Spray bundt cake with Bakers Cooking Spray or cooking spray and dust with flour.
  2. Preheat oven to 350.
  3. In large bowl, combine cake mix, pudding mix, cider, sauce, eggs, oil, and spices.
  4. Beat on medium speed for 2 minutes. Scrape down sides of bowl.
  5. Spoon batter evenly into bundt pan.
  6. Bake cake for 25-35 minutes.
  7. Remove from oven and allow to cool to touch.
  8. Mix sugar and cinnamon together in small bowl.  Melt butter if not melted already and add apple cider. Stir to blend. Brush butter-cider mixture over entire cake, using all of the mixture.
  9. Sprinkle with mixed ground cinnamon sugar as a garnish for cake. * If you want a lighter cake coating use less cinnamon.

Whipped cream: In chilled mixing bowl, whip heavy cream on medium high with wire whisk for 2 minutes, add confectioners sugar, and ground cinnamon, whip cream on high until stiff peaks form.

To serve:  Slice in wedges, serve with fresh cinnamon whipped cream.

Notes

Just make sure your cake is cooled after baking before adding the melted butter.  The butter will help the sugar cinnamon stick to the cake.  If butter is hot, it will melt the sugar in the cinnamon sugar mix.
