Pineapple, mango, bell peppers, lime and lemon juice with olive oil makes a great salsa for summer entertaining. Grilled fish topping or served with crackers or chips.

Ingredients

Scale

2 ripe mangos, peeled and diced

4 oz. can crushed pineapple, un drained

1/4 cup diced green onions

1/4 cup diced yellow pepper

2 tablespoons chopped parsley

2 tablespoons lime juice

1 tablespoon lemon juice

2 tablespoons olive oil

Salt and white pepper

Instructions

  1. Combine all ingredients in a medium bowl.
  2. Serve with blue corn chips or chips of choice.
  3. Keep refrigerated until serving time.

Notes

This is a sweet salsa.
