How to Make Fruit Pizza with Sugar Cookie Base

Start with a great sugar cookie recipe.  This cookie dough will stay the same shape you cut it after it is baked. Yeah!  Making mini or small 2″ round make great fruit pizzas.

Simple ingredients like butter, sugar, cream, flour, baking powder and egg create soft but firm sugar cookies.  Making cookies begin with softened butter and sugar creamed together in large mixing bowl.  Add egg, cream, and flavoring to butter mixture. Next add dry ingredients, beat to combine.  Dough will form a ball, press ball into a round disc, wrap in plastic wrap and chill 60 minutes.

Note: One way to make your cookie flavor great is to use Pure Vanilla extract.  Watkins makes a great flavor.  The other flavor I love is Cream Bouquet.  I use cream bouquet in many baked goods and frostings.

Roll out dough to 1/8″ thickness on floured surface. Dip cookie cutter in flour and cut out rounds. I used a 2″ cutter.  Bake cookie rounds on parchment lined baking sheet at 400 degrees for 5-9 minutes.  I know that is a large time span, but depending on how hot your oven is, be sure to check it at the 5 minute mark. Cookies should be light in color with a tiny bit of brown around the edges.

Remove from oven and allow cookies to cool about 3 minutes before moving to cooling rack. Once cooled, present your cookies with out frosting.

To Serve the Cookies as Fruit Pizzas

Mix softened 8 ounce package cream cheese with 2-3 tablespoons confectioners sugar until blended and smooth.  Place this in a cute bowl with spreader.  Serve assorted fresh cleaned berries in cute bowls or cups to allow guests to make their own “pizza’s”.   I used kiwi, peaches, blueberries because these fruits matched the college team’s colors. This was for a tailgating party for an early morning pre-game set up. Strawberries, raspberries, grapes and bananas would make great fruits for this fruit pizza.

Rolled Sugar Cookies are great for rolling out and cutting into shapes, baked and frosted.  This cookie was baked and served as the base for the Mini Fruit Pizza Cookies.

Ingredients

1 cup butter, softened

1 cup sugar

3 tablespoons half and half

1 teaspoon vanilla or creme bouquet

1 egg, room temperature

3 cups all purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon salt

Instructions

  1. In large mixing bowl add softened butter and beat on medium speed, gradually add sugar beat until light and fluffy.
  2. Add cream, vanilla  or creme bouquet and egg, blend well.
  3. Mix together flour, baking powder and salt, add to cream mixture.
  4. Cover with plastic wrap and refrigerate 1 hour.
  5. Heat oven to 400 F. Line 2 baking sheets with parchment paper, set aside.
  6. On floured surface roll 1/3 of dough at a time to 1/8” thickness.
  7. Cut dough with floured 2-inch round cookie cutter.
  8. Place cookies on baking sheet 1-inch apart.
  9. Bake 5-9 minutes or until edges are light golden brown.
  10. Remove from baking sheet and allow to cool before decorating.

Notes

  1. Butter will make a better flavored cookie, but if you want to use margarine make sure it is the regular margarine and not reduced fat.  Reduced fat margarine is made with extra water and will not hold up well when baked.   Baking with margarine will make a softer cookie.  
  2. Chilling the dough is a must.  The dough is soft and if not chilled it will be difficult to roll and cut.  The less you handle the dough, the less flour you add which will make a tender the cookie.
  3. Cookies freeze well before frosting.

To make spread for fruit pizza, you will need 1-8 ounce package of softened cream cheese, 2-3 tablespoons confectioners sugar, stir until smooth and creamy.  Option: purchase already made sweet cream cheese spreads.
