How to Make Fig Balsamic Tomato Strawberry Peach Topping

Making this topping is super easy and really flavorful. The combination of cherry tomatoes with fresh strawberries and peaches really is a unique mix of fruits.  Tomatoes are a fruit..what?  Yes, I know I was surprised too.  I think you will like this combination especially with the fig balsamic vinegar.  The flavors together are sweet, yet tart with the french vanilla ice cream.

So Lets Make this Topping

Wash and pat dry all the fresh fruit as well as cherry tomatoes.  I used sweet 100 cherry tomatoes.  Slice and dice all fruits except blueberries.  Place all the fruit in a small bowl and drizzle with the purchased fig balsamic. Gently toss fruit and vinegar to combine, cover with plastic wrap and marinate at room temperature up to 2 hours prior to serving.   When you are ready to serve,  scoop French Vanilla ice cream into dessert cups, spoon fruit medley over the ice cream.  Garnish with whole berries.

Note:  To prepare dessert ahead of time, scoop out ice cream and place dishes in freezer until ready to serve.  Add fruit right before serving. Fresh whipped cream would also be great with this easy dessert.

If you have any fruit leftover, cover and keep chilled. This topping is great over pancakes or waffles too.

Where to Find Fig Balsamic Vinegar

You can find the fig balsamic at an olive oil company and sometimes in the grocery.  We have an olive oil company in our region that has fabulous vinegars and flavorful olive oils.  They do take orders and can ship in case you want to try this particular brand.  I have used there Vermont maple balsamic vinegar for Maple Cookies Recipe.

1/2 cup diced peaches, fresh or canned-drained

1/2 cup sliced cherry tomatoes, heirloom or sweet

1/2 cup fresh blueberries

1/2 cup fresh sliced strawberries

Black Fig Balsamic Vinegar*

1/2 gallon Vanilla Bean Ice Cream* tested Eddy’s

Garnish: 4-6 whole strawberries & blueberries, sliced peaches

Instructions

  2. To serve: Place ice cream scoops in dessert cups, spoon fruit medley over ice cream, garnish with whole berries. Ice cream can be scooped in dessert dishes and frozen until ready to serve. Add fruit before serving. (Refrigerate leftover fruit.)
