Mini organic carrots, cherry tomatoes and cucumber slices, vertically set in small dipping bowl of Parmesan Peppercorn dressing. In addition to the veggies, carrot shaped cut Havarti cheese slices with crackers served on the mini board at each place- setting.
How to Make the Mini Veggie Charcuterie Board
Gather your mini board, I found these at Hobby Lobby in the spring. However, any small board can be made into a mini charcuterie-share-cuterie. I like to call these mini’s share-cuteries because they are so cute and easily shared.
Assemble Veggies & Dressing
Mini organic carrots, cherry tomatoes and cucumber slices make this veggie trio, but you can add veggies of your choice. You could also make a larger charcuterie board with more veggies and large bowl of dressing or bowls of variety of dressings.
To make the cucumber slices, I used English Cucumber and cut into thin slices. For each veggie cup, three cucumber slices are folded in half and speared with frilly toothpick and cherry tomato. The pick is inserted into the small dressing cup with veggies. This is really the garnish that makes this a fun treat to eat.
The dressing is home-made Parmesan Peppercorn but you can use purchased.

Ingredients
1 cup sour cream or Greek Yogurt
1/2 cup mayonnaise
8-10 grinds of black peppercorns-(2 tablespoons)
1 cup grated parmesan cheese or-shredded 3 cheese blend-parmesan, Romano, and Asiago
2 minced garlic cloves
1 teaspoon granulated sugar- or honey- optional
1/4 teaspoon sea salt
1/2 cup buttermilk
1/4 cup chopped chives as garnish-optional
Instructions
In medium bowl, mix sour cream and mayonnaise until smooth and creamy. Add remaining ingredients, whisking to combine. Serve chilled. If dressing is too thick, thin with additional buttermilk to desired consistency. Great for dipping, sandwich spread and salad dressing.
