When summer heat is on and you don’t want to heat up the kitchen create this simple recipe, red, white and blueberry caprese brushetta. Super simple recipe for hot summer days or for easy entertaining guest at home.
What makes Caprese Brushetta?
Diced strawberries, whole blueberries, basil, and mozzarella makes this fruit red, white and blue appetizer. Drizzled with balsamic vinegar, olive oil and served on toasted crusty bread slices. It’s pretty and has a sweet and savory flavor.
Fresh strawberries and blueberries make a pretty blend, but any mix of fresh berries would make a great caprese mix. Adding fresh basil and small mozzarella makes the recipe quick to mix up.
How to make the Dressing?
I used Fig Balsamic vinegar in this recipe but if you don’t want the berries to be dark, use a light or white balsamic vinegar.
Adding a tiny bit of brown sugar or honey sweetens and balances the fig balsamic. Of course a mild olive oil brings all the flavors together. Use a whisk to blend it all together.

Ingredients
Dressing
3 tablespoons Fig balsamic vinegar
1 tablespoon light brown sugar + 1 teaspoon honey
1/4 teaspoon freshly ground pepper
3 tablespoons olive oil
1/4 cup chopped fresh basil
Berries & Cheese
1 (8-oz.) tub fresh perline “pearl-size” mozzarella cheese balls
2 cups sliced fresh strawberries
2 cups fresh blueberries
Baguette-1/4″ slices
Extra olive oil for brushing baguette slices
Instructions
- In medium mixing bowl, add fig balsamic, honey, brown sugar, salt and pepper. Whisk all together.
- Gradually add olive oil continue to whisk for form dressing. Add chopped basil, stir to combine.
- Add fresh berries and cheese to dressing. Toss to coat.
- Brush extra olive oil over both sides baguette slices. Broil for 3 minutes each side of bread. Remove from oven, cool.
- When ready to serve, spoon fruit mixture over toasted baguette slices.
